Cherie Soria is the founder and director of Living Light Culinary Arts Institute and author of Angel Foods: Healthy Recipes for Heavenly Bodies. Cherie, often refer to her as the mother of raw gourmet cuisine, has trained many of the top raw food chefs today. She began her love affair with culinary arts at the age of 12, when she won her first cooking contest and went on to become one of the world’s leading vegetarian cooks.

The following recipes were made at the best food demo ever at the 2004 International Festival of Raw & Living Foods

Divine Decadence Dark Cacao Nectar
phase 2, serves 2

3 cups hazelnut mylk, prepared (almond milk may be substituted)
3 tsp. goji berries, soaked for 4-6 hrs.
3 tbs. raw carob powder
3 tbs. raw cacao powder
1 tsp. cinnamon
pinch of cayenne
pinch of salt

Process all the ingredients in a blender until smooth. Chil for 1-2 hrs. before serving.

Australian Country Bread

4 cups golden flax ground
2 cups almonds (ground into a flour)
3 cups zucchini (grated)
1/2 cup fresh dill (chopped)
1/4 cup fresh rosemary (chopped)
1/2 cup olive oil
3 tsp. salt
1 cup sun dried tomatoes (soaked and diced)
1 1/2 cup sun dried tomato soak water
1/2 cup lemon juice
1/2 tsp. white pepper
1 tsp. dried oregano
2 tbs. paprika
pinch of cayenne
1 tsp. dill seed (ground)

1. In a large bowl place: ground flax, almond flour, zucchini, dill, rosemary, celtic sea salt (2 tsp.), white pepper, oregano, paprika, (1 tsp.), cayenne, dill seed, and sun dried tomatoes.

2. In a smaller bowl combine: the lemon juice, olive oil, and sun dried tomato soak water slowly, mix until you form a beautiful thick bread dough.

3. Taste, you may wish to add more herbs, more sun dried tomato soak water if it is still dry, or more oil to moisten it up. This is your bread so play!!!

4. Form into a damper loaf and slice into 1/2 inch thick slices. Lay on a mesh dehydrator sheet, and dehydrate at 145 for 1 hour (note: we do this to prevent fermentation and bacteria forming. The internal temp. inside of the bread never reaches 145 degrees thus maintaining the integrity of the enzymes.)

Serve: serve with herb infused olive oil or eat alone.

I Can't Believe It's Not Butter!

phase 1

1/2 cup coconut butter/oil
pulp of 4 coconuts (approx 4 cups)
1 1/2 lemons, peeled
1/2 cup flax seed oil
1 tsp. salt

Process all ingredients in a blender until thick and smooth.

Sesame Tahini Dressing

phase 1, serves 10

3 cups sesame seeds, unsoaked and ground to a powder
1 cup sesame oil
2 tsp. salt
1 cup lime or lemon juice
1/3 cup ginger juice

Blend until very smooth. Makes a great base for other recipes!

Chocolate Brownies

phase 2

4 cups unsoaked pecans
4 cups unsoaked brazil nuts
3 tsp. sea salt
1 1/4 cups. blended peeled cacao beans
3/4 cup raw carob
2 cups soaked raisins (pureed)
6 tbs. agave nectar
1/2 cup melted coconut oil

Blend pecans into a fine meal and place in a bowl. Blend the brazil nuts to a fine meal and combine with the pecans. If you want the brownies chunky leave some nuts slightly chopped. Add the salt, cacao and carob powders to the nuts, and mix until well combined.
Mix pureed raisins thoroughly into the dry nut mix. Add your agave nectar and coconut oil into the brownie mix and work through it with your hands.
Place the brownie mix into a 9 X 13" glass dish and pat down evenly. Sprinkle with cacao powder and coconut flakes and refrigerate to harden.

Optional additional ingredients:
Orange zest
Almond extract
Coconut flakes
For Mexican brownies add 3 tsp. cinnamon and a pinch of cayenne!

The Electromagnetics of Health

Sunlight is composed of many different levels of energy. This energy is transmitted in the form of electromagnetic waves. These electromagnetic waves vary in length from .00001 of a nanometer (for cosmic rays, as they are called by science, and a nanometer is 1/1,000,000,000 of a meter) to about 5,000 kilometers, or 3,100 miles for electric waves. This is an incredibly wide range of energy radiations for one singular source to produce.

Not all of these energy rays from the sun reach the earth's surface and our bodies. The atmosphere that surrounds the earth protects it from absorbing all but a small and safe portion of these numerous wavelengths emitted by the sun. Of the waves that do reach the earth's surface, the human eye can only see a very small portion. It has been estimated that the human eye can see only a fraction of 1% of the electromagnetic spectrum that does reach beyond the layers of atmospheric protection so well provided for our safety. Ultraviolet and infrared radiation that does penetrate and come into our atmosphere is invisible to the human eye. It is the ultraviolet portion of sunlight that has been scientifically proven to be the most biologically active, and unfortunately, it has also been ultraviolet light that is eliminated and filtered out by common window glass and the supposedly solar transmitting glazes that are commonly used in our buildings today. Even sunglasses and clothing prevent the proper amount of sunlight and ultraviolet light from reaching our bodies and bringing vibrant and healthful properties to full peak.

The amount of ultraviolet light that is available from the sun depends upon the season and the location where you are on earth. The more atmospheres that the ultraviolet light has to pass through, the less there will be to reach the earth. In the winter, when the northern hemisphere is tilted away from the sun the sunlight must pass through more atmosphere, therefore less ultraviolet light is available for our bodies, not to mention for plants and other living things that depend upon sunlight for proper development and growth.

Sunlight emits all forms of electromagnetic rays, including cosmic rays, gamma rays, X-rays, ultraviolet rays, and near-ultraviolet rays in the visible range that our eyes see as color, and short wave, ultraviolet, infrared, radio waves, electric waves, and the incredibly long waves which reach us as heat and warmth. Unfortunately the current medical concept of sunlight incorrectly preaches to us of a "harmful and dangerous" sun, one that is responsible for aging, and capable of causing skin cancer. Fortunately though, this concept is responsible for the great amount of research done on the effects of sunlight on humans, animals and plants. This research provides an abundance of technical materials on the true effects of sunlight and its relation to human health and longevity. Undeniably, the sun plays a role in the development of skin cancer but is not the main factor in such problems.

You say Tomato...I Say "it's Patented!"

Roma tomatoes are like Kleenex. That is to say the name Roma, like the name Kleenex, is a registered trademark for a specific company's product. And Roma, like Kleenex, has succeeded too well as a marketing tool. Trademark lawyers are moved to itch and scratch when a brand name whose integrity they represent is tossed around by the public as though it were a generic label. I'm discomfited, too, when the sauce tomatoes I grow are referred to as Romas, if only because some growers’ Roma tomatoes taste like Kleenex. I'm proud of the San Marzano sauce tomatoes I grow. This year's tomato season still has a few weeks yet to run and it's a good time to make sauces or fresh salsas. It's also a good time, while the whole range of tomatoes are still hanging from the vine or showing themselves off at market tables, to review a brief glossary of tomato terminology.

What is Tannin?

Q. I drink Rooibos tea which is an herbal tea made in South Africa — it is caffeine-free. Rooibos and other teas apparently contain tannin. What is tannin? Is it beneficial or not?

A. Are you sure you want to know? Tannins are substances present in the seeds and stems of grapes, the bark of some trees, and yes, tea leaves. They are described as interfering with digestive processes, and until more effective synthetics were found, were used to tan animal hides and turn them into leather. That doesn't’t sound very appetizing, does it?

Here is what Harold McGee, author of On Food & Cooking (Canada, UK) has to say about tannins:

"In the plant, tannins are defensive compounds that counteract bacteria and fungi by interfering with their surface proteins. They also deter herbivores by virtue of their astringent effect on the mouth and their interference with digestion. The sensation of astringency is caused by the ‘tanning’ of the proteins in the saliva and mucous membranes of the mouth; lubrication is reduced and the surface tissues actually contract."

Deadly Food Addictions

Are You addicted to food? I am! That’s right. Just as addicted as an alcoholic is to alcohol, I’am addicted to food. That’s what got me into trouble with my health…..bad diet, bad lifestyle! I turned to food for every reason imaginable, because I was happy, sad, lonely, depressed, frustrated, stressed, or bored. Whatever the reason, I had to eat, and I did!! Food called my name. If potato chips were in the house I had to eat them! Food gets on my mind and I can’t get it off. I’ve been obsessed with everything from chocolate candy to french fries. Food surrounds every activity that I do. Sound familiar?

Many of us including myself have become addicted to certain foods. When I read David Wolfe’s "Sunfood Diet Success System" I found out that with most people there are usually 5 or 6 foods that they are actually addicted to and have trouble releasing. These foods usually include: bread, baked potatoes, coffee, potato chips, corn chips, tofu, chocolate candy, fish, and/or cigarettes (not a true food but certainly an oral gratification) and even carrot juice. Most of these foods come from hybridized plants. I never thought about any of this stuff before I got cancer. Then I began to pay attention to food and its role in disease and in healing.

I learned about hybrid foods from Wolfe’s book where he brought to my attention that hybrid foods are "missing vital electrics." This is what Wolfe has to say about hybrids. "They are unnaturally high in sugar and off in the mineral ratios. Hybrid foods are devoid of proper mineral balance that all wild foods contain. So when we eat a lot of hybrid fruit, that leads to mineral deficiencies in our bodies. Not only are hybrid fruits and sweet, starchy vegetables unbalanced in minerals, it is eating too much of hybrid sweet fruit and sweet and starchy vegetables that causes the body to bring heavy minerals from the bones into the blood to buffer the hybrid sugar. This hybrid sugar is not completely recognized by the liver and pancreas. The minerals and sugar are spilled off into the urine. Hybrid sweet fruit and sweet starchy vegetables can over stimulate you and cause you to lose minerals."

So, what are hybrid foods? Hybrid foods are foods which will not grow in Nature. They are foods which must be nurtured and protected by humans or else they will be overcome by birds, insects, worms, fungi, and bacteria.

Some common hybrid fruits are: seedless apples, bananas, several date varieties like medjools, kiwis, seedless pineapples, seedless citrus fruit, seedless grapes, seedless persimmons, seedless watermelons. Common hybrid vegetables include: beets, carrots, corn, and potatoes. Common hybrid nuts and seeds include: cashews, oats, rice, and wheat. Brown, white, and "wild" rice are hybrids. Commercial "soft" wheat is a hybrid. Alfalfa sprouts and most commercially available legumes are hybrids.

Hybrid foods are attacked by different forms of fungi and are much more susceptible to early decay. Hybrid foods can feed fungal conditions like candida whereas non-hybrid or wild fruit will not lead to such a condition.

Hybrid foods are everywhere so if you eat you’ve got to eat some hybrids. If you want to make eating hybrids work for you David Wolfe recommends that you eat small amounts of the fruits and vegetables. Mix bananas with fat (avocados, nuts, olives) and it will lessen the hybrid effect on the system. If you eat more green-leafed vegetables and avocados, nuts, or olives with hybrid sweet fruits or vegetables it will decrease their effect on the blood sugar and increase the utility of elements in the food. Hybrid grains, and legumes should be soaked and sprouted, and absolutely never cooked. As long as they are raw, the body can draw nutrients from them and can deal with them.

Eat organic locally grown produce as much as possible. Eat food that is in season. Identify the hybridized foods (raw and cooked) in your diet. Make a decision to replace these foods with more natural foods as soon, and as often, as possible. See and feel the difference that eating the right foods can make in your life. I had no idea how bad food was making me feel until I cleaned up my act and started eating raw and living foods. For the first time I can remember feeling really good. Instead of wanting to take a nap after eating I felt energized. The pain and stiffness in my joints disappeared. My depression went away. My health returned.

It’s not easy to change a lifetime of bad eating habits, but it’s the most important thing that you can do to really improve your health. It’s not only how you prepare your foods, it’s making the right selections of foods to prepare, and then eating those foods in the right combinations.

Addictions can be very difficult to break, but it can be done. First you have to want to make the changes. For me it took a life threatening situation (cancer) to get my attention and make me want to make changes in my diet. For some people it can be extra weight that needs to come off, for others it could be a very serious disease that wakes them up. Next you want to pinpoint what foods you are addicted to and when you eat these foods. Begin to replace your "bad foods" with foods that are good for you. Feel the difference when you eat fresh, organic, raw and living foods. The more you eat this way and the cleaner your body becomes, the less you will crave the old "bad food". The longer you eat healthy, the easier it becomes.

Detoxing the body is important if you want to give up food addictions. As long as there is residue of the bad foods in your body, you will continue to crave those foods. So, don’t wait to change your ways. Think about your life and your health. Is a moment of gratification on your lips and in your mouth worth a lifetime of disease, pain, and suffering. Every disease comes from toxicity and deficiency in the body, and all toxicity and deficiency is directly related to every bite you put into your mouth. Everything you eat effects your overall health. Make a conscious decision to change your bad habits and to eat right and heal! Get the information and support you need to help you make those changes, and then Just Do It!!

Truly Raw Cacao Beans (Peeled)
Raw chocolate comes from cocoa beans which grow on cocoa trees called Theobroma cacao. Like several other plant-based foods such as tea and grapes, chocolate contains flavonoids, a group of compounds which may exhibit biological activity. Research suggests that in several ways flavonoids may help to maintain the body's natural defenses and cardiovascular health. The cacao component in chocolate is rich in a number of essential minerals, including magnesium, copper, potassium and manganese. Indeed, chocolate is thought to be one of the largest single contributors of copper to the diet in the United States.

Phytochemicals in RAW Chocolate
In addition to the well-known and essential macro- and micronutrients present in chocolate, there are a number of phytochemicals in cocoa and chocolate that may have important health effects in humans. Phytochemicals are naturally occurring chemical compounds present in plant foods such as cocoa, and they are attracting a great deal of interest in the nutrition and medical research community because of their potential health benefits beyond that of classical micronutrients such as vitamin C, vitamin D, etc. Over the years, cocoa has been recognized for its phytochemical content, especially the methyl xanthines caffeine and theobromine, and, more recently, the antioxidant flavonoids. Although chocolate is often thought to contain relatively large amounts of the stimulant caffeine, the actual amount is relatively low compared with that present in tea and coffee.

Flavonoids in RAW Chocolate
Of much greater interest in the context of health benefits is the rich flavonoid content of raw cocoa and the relatively rich flavonoid content of some chocolates and cocoas. Flavonoids are part of a large and diverse class of phyto-chemicals called polyphenols. Several thousand flavonoids exist in substantial amounts in common plant-based foods, such as tea, chocolate, cocoa, soybeans and wine. Epidemiological research, which studies the association between diet and health, in the last decade has suggested that some flavonoids might protect against certain chronic diseases, especially cardiovascular disease.

Other Fun Facts!
-Chocolate's antioxidant potency roughly matches that of gallic acid, another potent antioxidant, and is even more effective at cutting oxidation of (LDLs) than those in red wine (consumption of which has been found to reduce significantly an individual's risk of heart attack).

-Chocolate contains copper (.8mg per 100g) which enhances red blood cells' ability to carry oxygen. The average woman is deficient in copper. A good source of copper is liver but wouldn't you rather eat chocolate?

-PEA(Phenylethylamine) is followed closely by theobroma as the chocolate chemical most responsible for lifting depressions. It is one of a group of plant-based stimulants called methylxanthines whose best know member is caffeine. Chocolate has straight caffeine , too, but in very small amounts (70mg/100g). The effects of theobroma are similar to, but milder than caffeine's, and include alertness and decreased fatigue.

-Chocolate's high level of magnesium (131mg per 100 g) is also credited for adding to the euphoria one gets from eating chocolate. Magnesium levels are found to be low during menstruation.
-Serotonin (3mg/100g) and tyramine (2mg/100g) are also present in chocolate and provide a mild calming, balancing effect.

7. Q and A with RawGuru

Below are just a few questions I receive in my email. I Hope it helps you!

Question #1: "Alex, can I use mesquite pod meal in a recipe if it calls for carob or cacao?"
Answer: Yes, you may. You can also use half carob and half mesquite. Don't forget to taste as you go!

Question #2: "Sometimes after I eat a salad, I want to munch on some nuts and dried fruit. What can I do to stop this habit?"
Answer: The best way is to make a salad with all the raw food groups: sweet, sour, fatty, salty, and greens! So make a salad with a little bit of fruit, little nuts and seeds, and a lot of green leafy veggies! Also, people that eat blended salads tend to want to chew on something afterwards and they grab a bag of nuts or something to satisfy themselves. You may want to blend half of your salad and use it as a dressing for the other half. Chew! Chew! Chew!

Question #3: "What is the best water filter you could recommend?"
Answer: I like Jupiter Water Filters and the Wellness Water Filter.

Question #4: "I have dark circles under my eyes...what can I eat or do to minimize this?"
Answer: You probably already know to get plenty of sleep and relax. Drink plenty of water throughout the day to keep your kidneys functioning well. Don't overeat, don't eat/eat lightly (no fatty foods) after the sun goes down. Get a rebounder to work those lymph glands and adrenals! Minimize your nuts and seeds, and increase your greens and fruits! One last thing that I find helps is to take a hot shower, then finish with a cold shower. Very refreshing and rejuvenating!

Question #5: "I have pain and sensitivity in my teeth when I eat apples and other fruit.... my teeth are not as white as before, can you help me?
Answer: Here is a short list I find will help you have perfect teeth and gums for life.
Rinse your mouth with water after every meal to neutralize the acidic environment in your mouth. Stop brushing with regular toothpaste and use h202 and/or sea salt with water or wait until my tooth care products come out. Minimize snacking. Minimize dried fruits and unsoaked nuts/seeds. Eat foods high in magnesium and calcium. Take angstrom sized minerals of boron and zinc. Chew greens after a heavy meal. Use an ultra soft tooth brush when you brush your teeth. Use a water pik to get rid of food particles (food particles decompose and create acidity and make your teeth more prone to decay and sensitivity) Be happy and your teeth will be happy!
