Easy
Crunchy Veggie Salad

1/2 cups of the following: diced carrots, fresh peas, diced red onion, diced
radishes, diced celery, diced ripe avocado, chopped tomato, diced cucumbers
1 cup mixed greens
How to:Toss everything together in a large bowl. Drizzle 1
tbs. of olive oil and the juice of one lemon on top. Season with sea salt. Enjoy!
Sweet & Sour Salad

1 small garlic
clove, minced
Zest and juice of 1 lime
2 tbs. Lemon juice
2 tsp. soy sauce
1-2 tsp. honey or agave nectar
¼ cup sesame or olive oil
Sea salt to season
3 cups red and green cabbages (1/2 small head), thinly sliced
1 bok choy, thinly sliced
½ bunch cilantro (chopped)
1 carrot shredded
In a large bowl whisk together the garlic, lime juice, zest, lemon juice, soy, agave, and oil until well combined. Season with salt and set aside.
In another bowl toss together the cabbages, bok choy, shredded carrot, and cilantro. Pour dressing over the salad, toss, and let sit for a few hours in the fridge, serve at room temperature. Garnish with sesame seeds.
Pickled
Ginger

2 cups lemon juice
or apple cider vinegar
1 tablespoon salt
1/2 cup agave nectar or honey
1 small beet, peeled and halved
2 bay leaves
1 jalapeño pepper
2 cups ginger, sliced very thin
Blend the lemon juice or apple cider vinegar with the salt, and honey. Pour everything in a glass jar, add the bay leaves, small beat, and the sliced ginger. Close the jar with a lid and place in the refrigerator for one week to pickle.
Mustard
Green Wasabi

2 handful's chopped
mustard green leaves
1 cup chopped horseradish
2-4 tbs. Water or more if needed
In a food processor process everything till smooth. If not green enough, add more mustard leaves. Set aside until ready to serve. (Be careful transferring wasabi as the fumes are potent)

1 cup tahini or
cashew butter
1 cup agave nectar or ½ cup and 1 tbs. raisins
½ cup mesquite pod meal or carob
½ cup raw cacao nibs (ground fine)
1 tsp. sun dried vanilla bean (seeds only)
1-2 pinches Celtic sea salt
Combine everything together till smooth. Let this mixture refrigerate for 1 hour. After refrigeration, spoon the mixture into a hefty zip lock bag and cut one of the bottom sides. You will use this as a pastry bag. Using the excalibur dehydrator, take out the dehydrator trays, line them with a teflex sheets and begin piping "chips". Now place the trays with the teflex in the dehydrator and dehydrate at 105°F for 20 hours or until dry. Keep these chips in a cool dry place.

1 T. agave,
or date syrup (optional)
Blend until smooth and creamy. You may pour back into coconut shell like we
do at the restaurant and serve with a straw or pour into a tall glass and enjoy.
This is so GOOD! Add an edible flower for decoration.
Key-Lime-Mousse
Tart

Serves 4
Ingredients
Tart Crust
1/2 pound raw macadamia nuts
1 cup shredded, unsweetened dry coconut
1 tablespoon grated lime zest
2 tablespoons lime juice
1/2 vanilla bean, seeds only
1 teaspoon salt
4 packets Stevia (an all-natural artificial sweetener, available at health-food
stores)
2 tablespoons agave nectar (available at health-food stores)
Cold-pressed coconut butter (also known as coconut oil; available at Garden
of Life), or macadamia-nut oil
Key-Lime
Mousse
5 ripe avocados, peeled and pitted
1/2 cup lime juice
1/4 cup packed grated lime zest
1/4 cup agave nectar
2 tablespoons cold-pressed coconut butter
1/2 vanilla bean, scraped, seeds reserved
1/2 teaspoon salt
10 packets Stevia
UNcooking
Instructions
Tart Crust
Put the nuts in the bowl of a food processor, and place in the freezer to chill.
Once nuts are chilled, add all ingredients except coconut butter to the bowl, and pulse until well combined but still chunky. Do not overprocess, or the nuts will become oily.
Lightly oil four 41/2-inch removable-bottom tart shells with coconut butter. Divide mixture into 4 parts, and press into tart shells, smoothing it with the bottom of a measuring cup. When shells are filled, wrap in plastic, and place in the freezer to chill until firm.
Key-Lime
Mousse
Place avocados, lime juice, lime zest, agave nectar, coconut butter, vanilla-bean
seeds, and salt in the bowl of a food processor, and pulse until smooth. Add
Stevia to taste, and process.
Carefully remove chilled tart crusts from the shells. Fill with mousse, cover, and chill in the refrigerator or freezer until the mousse is firm.

Raw food
craze is set to sweep the world after debut in the US

London - Cavemen may have thought nothing of sinking their teeth into the raw flesh of a freshly slaughtered animal, but things have progressed somewhat since then. Boiled, baked, griddled and grilled, almost everything we eat has been cooked in some way before it reaches our lips.
But all that is set to change. The raw food revolution has swept the United States - and now it is spreading around the world.
Forget the low blood sugar GI diet and the fry-up friendly Atkins. The only rule for the raw food diet is that nothing is cooked - whether it be beef or beetroot, lamb or leeks.
A-list Hollywood actresses such as Uma Thurman, Demi Moore and Natalie Portman are devotees.
A plethora of "cookbooks" is also being launched to promote the advantages of a raw food lifestyle, and several nutritionists and food experts have launched courses in how to make the switch to raw.

on cactus : 'Nopales' could be the next health-food craze

Reesa Crisson tentatively touched a thorn and then yanked her hand back.
"I wouldn't know how to cook this," she said, referring to the paddle-shaped arm of a prickly pear cactus, or nopal, one of Mexico's signature vegetables known in Spanish as "nopales."
"I've had the kind that's canned in brine, but I think I'd like it better fresh if I knew how to get rid of these little stickers."
Crisson, 31, from Dahlonega, and her friend Amanda Daniel, who speaks fluent Spanish, were browsing in the produce department of J&J Foods in Gainesville. They looked to another shopper for advice.
"First, you have to scrape the spines with a knife like this," explained Belen Reyes, making rapid downward motions.
Speaking in Spanish translated by Daniel, Reyes, who is from Mexico, rattled off the ways she enjoys preparing nopales (called "nopalitos" in their sliced form): sauteed and mixed with scrambled eggs; garnished with pico de gallo; deep-fried; basted with oil and grilled alone or stuffed like a pita with cheese; served as a side salad with steak at family cookouts.

Fomenting
for revolution from the comfort of trees

Thoughts soon turn to fomenting revolution when you’re holing it out in, or hugging a leafy tree.
Bucking the system seems a passion for eco-terrorist Tre Arrow, who turned up with friends for an extradition hearing in Vancouver court this week. While an august judge tried to train her ears on the arguments of lawyers, funky fleece-wrapped backpackers worked on their yoga relaxation exercises. "Ohmmm" was the drone in a courtroom, where not even court reporters need the temptation to nod off.

The
latest diet fad- but is raw meat healthy?

EVER since neolithic man sparked a flame, cooked meat has been on the menu. Yet the latest celebrity diet to arrive in the country has turned back time, advocating raw meat as the secret to health and weight loss.
The "raw food revolution" believes ingredients such as beef, venison and fish should not be baked or boiled.
Celebrity advocates of the new diet are said to include Hollywood actresses Uma Thurman, Demi Moore and Natalie Portman. In the United States, a new style of raw food restaurants - dubbed "eateries without ovens" - are cropping up, and while many of them focus on vegetarian meals, meat dishes such as carpaccio of beef are also found on the menu.
