Raw
Blended Sweet Potato Soup by Natalie Rose
32 oz carrot juice (fresh)
1 medium sweet potato (cubed, peeled)
4 dates, pitted
1 avocado (scooped out)
several dashes of pumpkin pie spice
Blend
until smooth. enjoy as much as you like!
Makes 4-5 cups.
Jamaican Spice Cubes by Jeremy Safron
This recipe is in the style of Jamaican jerk baked tofu using avocado instead of tofu. This recipe requires a firm yet ripe avocado and a special cutting style that i learned from a japanese sushi chef long ago.
Ingredients:
3 Avocados
1
cup tahini
1 tablespoon ginger juice
1/4 cup tamarind
1 habenjero pepper
1 teaspoon Allspice powder
1 soaked date
3 sprigs of cilantro
Bottom 3 inches of a scallion
1 tablespoon tangerine juice
2 tablespoons olive oil
Pinch of Salt
*add water only if needed*
Put
the avocados aside while preparing the sauce Place all ingredients (except avocados)
in a strong blender or blender cup (nut butter jar screwed onto an oster or
other generic blender base)
Blend until smooth (making sure the pepper blended well) adding water slowly
as needed.
Now
take an avocado and cut it in half, remove the pit, and place it open face down
- shell side up
Next cut two small incisions in the back of the avocado shell. Peel back the
shell of the avocado leaving the fruit exposed on the cutting board. Gently
slice the avocado into cubes. Place the cubes in a bowl and pour the sauce over
them while softly moving them around in order to coat every one. Put the coated
avocado cubes on a dehydrator screen sheet If there is extra sauce pour it over
the top (it may drip thru so use a tray below with a teflex) or you can save
the sauce for afterwards. Now dry the cubes at 108º for 1-4 hours. They
are ready to eat or serve them with a jamaican stew or slaw or jambalaya.
PINEAPPLE-CUCUMBER
GAZPACHO by Chef Matthew Kenney
Makes 4 to 6 servings
4 cups chopped,
peeled cucumber (1 large English or a few Kirbys)
4 cups chopped pineapple (1 large or 2 small)
1 cup fresh pineapple juice
1 small jalapeño pepper, seeded and diced
1 green onion, white and 1 inch of green, chopped
1 tablespoon lime juice
2 teaspoons sea salt
1 handful cilantro leaves, plus a few for garnish
3 tablespoons avocado or macadamia oil
1 handful finely chopped raw macadamia nuts
In a blender, add 3 cups each of cucumber, pineapple, pineapple juice, jalapeño, green onion, lime juice and salt; blend smooth. Add remaining cup of cucumber and pineapple, cilantro and half of oil. Pulse a few times, leaving mixture chunky.
Taste and adjust seasonings. Serve garnished with cilantro.
Raw Chocolate Mousse by Alex Malinsky
2 bananas chopped
2 tbs. ground cacao nibs
1 tbs. avocado oil
1-2 tbs. agave nectar
How to: Put everything in a vitamix and blend till smooth. Add a little water if needed. Chill or eat as is.
Tri-Layered Cake from the TOL

Crust:
2 C Pecans
3 drops lemon zest or zest of 1 lemon
¼ t salt
Blend until butter like. Option: 1 T coconut oil. Spread evenly in a spring-form pan.
Care-amel
1 C walnuts
1 avocado
½ C calimyrna figs, soaked de steamed and cut in half.
½ C wild blueberries, soaked overnight or with warm water if short on
time.
¾ C soak water
½ t salt
¾ C coconut oil
1 drop of orange essential oil
Blend all of the above ingredients.
Layer 2: Straw berry.
1 C walnuts
1 avocado
½ C calimyrna figs, soaked
2 C fresh strawberries
¼ C small beet root/ raspberries/ goji berries for color.
½ C coconut oil
1-3 drops orange essential oil
Blend all of the
above ingredients.
Layer 3: Chocolate topper
1-1 1/2 C soaked
raisins
¼ C coconut oil
¼ C cacao butter, melted to an oil
¼ C cacao, ground in coffee grinder
¼ t salt
pinch cayenne
Blend all of the above ingredients. Adjust thickness with raisin water. Sprinkle with ground goji berries.
Candy nuts
Any soaked nuts
Agave, yacon syrup/ soak water
Salt, cayenne, cinnamon etc…
Mix everything
up and spread on teflex sheets to dry.
Assembly: Pour the Care-amel on top of the crust. Freeze until firm. Repeat
with layers 2 and 3. Chill before serving.

food in the name of optimum health. But then, the beautiful people were beautiful
and shiny haired before they gave up ovens. I decided to give my oven a rest
for a week, to see if I can catch any symptoms of becoming glamourous and gorgeous.

Time for the crunch test
I couldn't help myself. The aroma suffused the air, my mouth was moist at the thought of the morsels melting on the palate, and my stomach stirred in agreement. Looking over my shoulder to make sure the children could not see me, I walked up to the counter, ordered a cheeseburger and ate it behind the cover of a potted plant in the service station. Delicious.
My wife, children and I were about to try the latest diet craze, "raw food", in which one is supposed to forsake all cooked food - never mind junk.
