Last month's fruit was the Toddy Palm or Palmyra Palm. The Toddy Palm can reach a height of up to 30 meters and up to 1.7 meters in diameter. Fruits are orange and ripen during April-May and appear in bunches. They are tender, hence enveloped in a fleshy calyx. They strikingly resemble the coconut in taste.

Gourmet & Simple Recipes

Creamy Avocado RawSlaw
by Alex Malinsky

1/2 tsp. mustard powder
2 tbs. lemon juice
1 tbs. agave nectar or date paste
1 tsp. sea salt
1 avocado (mashed)
1 tsp. avocado oil
Water if needed

How to: Blend all the above ingredients till smooth. Set aside.

1 green cabbage (shredded)
2 medium carrots, grated
2 green onions, chopped (optional)

Add cabbage, carrots, and green onions in a large bowl. Pour in dressing, and massage until perfect. Refrigerate, covered, until slaw begins to soften, 1 to 2 hours. Enjoy!

Cacao Mint Melts

1/2 cup young coconut meat
1-2 tbs. cacao powder (ground cacao nibs)
3 tbs. raw agave nectar
4 tbs. almond or cashew butter
3 tbs. coconut oil
1-2 drops mint oil
Pinch of sea salt

Blend the young coconut meat, cacao powder, sea salt, nut butter and coconut oil together till smooth. Stir in the mint oil till combined. You can freeze this chocolate mixture till hard (30 mins) or eat as is. You can also put this mixture into molds or ice cube trays and put them out when chilled. Enjoy.

Simply Spinach Pie

Crust:

1 cup almonds
1/2 cup hazelnuts or brazil nuts
1/2 tsp. sea salt or dulse flakes
1 tbs. avocado oil or olive oil
1/2 tsp. dried dill
3/4 cup water

How to: Process everything in a food processor till crumbly yet moist. Add more water or oil if needed. Press crust mixture in a glass baking dish.

Filling:

2 avocados
2 cups spinach
1/2 cup cilantro
1 tbs. olive oil
1 tbs. ground golden flax seeds
1 small zucchini (chopped)
2 tsp. lemon juice
1 tsp. dried dill
1 garlic clove (chopped)
1/2 tsp. sea salt or more if needed
P inch of nutmeg (optional)

How to: Blend all of the above ingredients till smooth and consistent. Add water if too thick. Pour mixture on top of crust. Garnish with spinach leave, chopped olives and walnuts. Refrigerate for up to 4 hrs before serving.

Island Goddess

½ small very ripe organic pineapple or rockmelon in Summer
30ml fresh wheatgrass juice
Juice and pulp of a young coconut
1 teaspoon organic virgin coconut oil

Whizz it all together and sip slowly. Wow!

Mango Tart with Macaroon Crust

Serves 8

2 c dried coconut
1/2 c cashews
3 T agave
T fresh lemon zest
1/4 t Celtic salt
2 c dried mango, soaked for 1-3 hours in 2 c orange juice until soft
3 T dates pitted
1/4 c unsoaked macadamia nuts (opt)
T coconut butter
T lemon juice
1 fresh mango peeled and sliced thin

In food process or, process the coconut, agave, lemon zest, and salt until mixture forms a ball and is fully blended. For into a 9-inch Tart pan. Set aside. In high speed blender, blend the following, rehydrated mango, saving and setting soak water aside, dates, unsoaked mac nuts, coconut butter and lemon juice. Blend until creamy, may need to fold with rubber spatula for optimum consistency. Pour mixture into pie tart crust; evenly spread the thinly sliced mango. Chill for at least 2 hours so tart forms and sets.

Thanks to chef Michael Schwartz, formerly of Nemo, it aims to be fabulous-tasting, too, from Afterglo's signature appetizer, the Beauty Pill, a cake of salmon, mango and broccoli sprouts, to chile- and mint-sparked bison ceviche.

Cooked Food Versus Raw

Some Of The Known Differences

Cooked foods cannot create true health because they are missing some very vital elements needed by the body for its optimal functioning; things like enzymes, oxygen, hormones, phytochemicals, bio-electrical energy and life-force. When foods are heated above 105 degrees F they begin to lose all of these. By 118 degrees F, most food is dead. Yes, the vitamins, minerals, carbohydrates, fats and proteins are still there, but in a greatly altered state - not at all what nature provided.

Food can be your friend as well as your enemy. We can?t abandon the importance of proper food in our life, after all food is the fuel which keeps us going. It is unfortunate but true that many people fail to grab all the vitamins, minerals and other nutrients through their daily diet. This makes our body more prone to diseases, balanced diet is outmost significant for a fit and fine body.

Q and A with RawGuru!

Q. I am trying to start the raw diet but I can't stop eating bread, sweet pastry and the like. What can you recommed me to do?

A. I would first begin by increasing the fruit intake in your diet and eating more green leafy veggies. Your body is craving those minerals. If you do not like the taste of vegetables or do not seem to eat enough, your best bet would be to eat blended green soups. Make a large green salad and blend it up. Eat it with your favorite chopped veggies. You should also eat a variety of raw foods like fruits, vegetables, nuts, seeds, sea weeds, super foods, herbs.

Q. Will raw food help in reversing my nearsightedness? and when will i start seeing an improvement in my vision?

A. It may, eat foods high in carotoids. Eat dark green leafy vegetables and broccoli. Also eating foods high in zeaxanthin and lutein helps a lot. The richest naturally occurring source is goji berries, and incan berries. Citrus fruits help as well. A salad made with spinach leave and dark leafy veggies is rich in zeaxanthim. Regular grazing on raw nuts and seeds are essential. Nuts and seeds like brazil nuts, almonds, hemp seeds, flax seeds.
Drinking water is very vital for the health of your eyes. At least 1-2 cups of water before each meal. You can also try eye exercises that will tremendous help your eyes. Click here.

Q. I am a 20 year old female, I was raised vegetarian, and I am currently 100% raw vegan. One thing I have noticed is that sometimes my mind drifts, or I get a little air headed. Is this because I am not getting enough of
one of the macronutrients, like carbohydrates, or simply because I need to consume more calories in general? have you experienced this yourself? my mother and father are both raw food vegans and don't have any problems, But I am a lot more active than both of them. Thanks for your help!

A. You sound like you are deficient in b vitamins and minerals. It can also be a candida problem. Try eating nutrient dense foods and see if this helps. You will feel more grounded if you eat plenty of vegetables and super foods. Taking some living vitamin b complex won't hurt. You can order some here. Remember not to overeat and eat a variety of raw foods.

Q. I'm a single guy whose been juicing for about five years but other than that my diet is not good at all and I want to slowly integrate the raw lifestyle. Could you tell me some of the herbs or veggies I could use when I'm in a rush? Also is it bad to eat fruit after lunch time?

A. You're off to a great start. The best way to ease into the raw lifestyle is to simply add more raw food to your current diet. The more raw you add the more raw you will be. There is no single herb or veggie that will help. You have to eat a variety of foods. Washing veggies ahead of time helps a lot. So, if you wash a head of lettuce, some apples, etc. you will never go wrong. Some great herbs to have on hand are cilantro, parsley, mint. Some veggies you can have on the go is celery with raw almond butter, carrot sticks, apple slices, oranges, and the list
goes on. Be creative. Listen to your body and feed it what it wants.

It is not bad to eat fruit after lunch time. It is best to eat fruits in the day and veggies at night. The reason being is sugar (fruit) will get you going throughout the day and veggies will calm you down. Munching on these transitional foods helps very much. You can order some here.

Q. I have just bought a lot of raw nuts, how do I store them to last the longest without ruining them?

A. The best way is to store them in the fridge or for longer shelf life in the freezer. High fat nuts like macadamia nuts, brazil nuts, pine nuts, etc. are best stored in the freezer. All other nuts are best kept at cool temperatures. It is best to buy nuts in the shell and crack them yourself, this way you will know they are fresh, and you will eat less.
