Gourmet & Simple Raw Food Recipes

Kalechi by Alex Malinsky

1 bunch dino or green kale (chopped)
3 carrots (cut into 1 inch strips)
2 cucumbers (cut into 1 inch strips)
3 heads broccoli (chopped)
2 bunches scallions (cut into 1 inch sections)
1/2 bunch cilantro (chopped fine)
1 apple (dice into cubes)
2 Small oranges (fine dice)
1 Lemon (fine dice)

Add the above ingredients into large bowl.

1 tbs. apple cider vinegar or lemon juice
3 tbs. raw sesame seed oil or avocado oil
2-3 tsp. sea salt
1 tsp. crushed red pepper or cayenne pepper
3 gloves crushed garlic
2 tbs. sesame seeds

Combine above ingredients and add to the veggie mixture above. Massage until well combined. Store in a glass or ceramic jar with a lid in the fridge for 3-4 days before serving. Enjoy!

Green Smoothie by Victoria Boutenko

One package of raspberries (6 oz.)
Two ripe bananas
Half a bunch of Italian parsley
Several spinach leaves
Two cups of water

Blend well.

‘POWER BREAKFAST’ RECIPE by Angela Stokes

1 banana, thinly sliced
1 apple, cut into small chunks
Small handful of soaked sunflower seeds
Small handful of soaked pumpkin seeds

small handful of soaked sultanas
1 tbsp maca powder
1 tbsp hemp protein powder
1 tbsp carob powder
½ tbsp yacon syrup/agave/honey
½ tbsp hemp oil
Small handful of goji berries
A
a little almond milk to blend

Combine all the ingredients in a bowl, adding in fresh almond milk to desired consistency. ENJOY.

Basic Winter Green Smoothie from Instant Raw Sensations by frederic Patenaude

1 apple
1 pear
2 bananas
1 and 1/2 cups kale
1 stalk celery
Water

Dice the fruit or cut in big chunks. Blend all ingredients together with about half a cup (up to 1 full cup) of water.

Sticky Hazelnut Clusters from Naked Chocolate by David Wolfe & Shazzie
Makes about 16 balls

8 dates, soaked and stoned
1/2 cup of baby figs (dried)
2 cups of hazelnuts
2 tablespoons of agave nectar
1/2 cup of chocolate powder (crushed cacao beans/nibs)
Pinch of Celtic sea salt

Put the hazels into a food processor and process until broken, not powdery. Put them into a mixing bowl. Put all the remaining ingredients into the food processor and process until the mixture starts to form a ball. Take small sections of the mixture and roll into balls. You can eat them as they are, or put them into a dehydrator for about 4 hours to solidify.

Prince Pondicherry's Cherry Cake

Prince Pondicherry's Cherry Cake from Naked Chocolate by David Wolfe & Shazzie

Base:
1 level teaspoon dried orange zest
3 cups of baby figs (dried)
1 cup of almonds (soaked in water for 1 hour)
1 cup of almonds (dry)
¼ teaspoon of ginger powder
¼ teaspoon of grated nutmeg
1 cup of dried cherries
2 cups of fresh cherries
1/2 cup of poppy seeds

Jam:
2 cups of cherries, stoned
1 level teaspoon of chocolate powder (crushed cacao beans/nibs)
6 prunes (dried), stoned

Cream:
3 cups of cashews (dry)
Juice of 1-2 oranges
1 tablespoon of water
1 vanilla pod

To make the base:
Blend everything together in a food processor until it forms a ball. You might have to do this in two lots as it's quite big. Line a lose-bottomed cake tin with cling film and put half the mixture into the tin, then flatten it out. Turn this out onto a plate. Put the remaining mixture in the tin, and flatten it out, leaving it until you've completed the next step.

To make the jam:
Blend all the ingredients with a hand blender. Add more prunes if not solid enough.

To make the cream:
Cut the vanilla pod into tiny pieces. Blend all the ingredients together using a hand blender. You could start the mixture off in a food processor, and then use a blender once the cashews have broken down.

To complete the cake:
Spread half the jam onto the cake base. Spread half the cream onto the cake base. Turn out the other half of cake and place it on top of the cake. Spread the rest of the jam on the top of the cake. Spread the rest of the cream on top of the jam. Decorate with cherries and a deep red rose.

Pros and cons of eating uncooked vegetables

ISLAMABAD, January 24 (Online): A new study conducted by researchers at Washington University School of Medicine suggests that vegetarians who don`t cook their food have abnormally low bone mass but have other biological markers indicating their bones, although light in weight, may be healthy.

The team led by Luigi Fontana studied 18 strict raw food vegans ages of 33 to 85 who ate a diet that not only lacked animal products but also included only raw foods such as vegetables, fruits, nuts, seeds, sprouted grains and legumes, dressed with olive oil. They had been on this diet for an average of 3.6 years.

Question: "I am a raw teen still working on transitioning and I feel like a cleanse or fast would really help me out but my parents are conserned it might interfere with my health and development as a young adult. Do you have any ideas for how long I should go, and specifically what is most affective for someone in my stage. Water, juice, a combo?"

Answer: "The best way to fast is on juices and water. Begin by fasting once a week for the first 2-3 weeks and then you can cleanse more if you like. I would not recommend fasting for long periods of time. Once every week is plenty for teens. Eating raw and living foods is also a wonderful cleanse"

Question: "I am interested in purchasing a high quality blender, for making the famous new Green Smoothies, as well as blending dry nuts, seeds, and grains, and blending, cracker recipes, and MAYBE even some ENERGY SOUP. Will you give your opinion~experience~wisdom on the ones you offer for sale?"

Question: " I have a long history in Hypoglycemia and am wondering whether I am in the condition to do so. Over the years, I have discovered that there are things I should not eat, such as Bananas, Potato, and other high-suger contain produces, not to mention rice and bread. Do you mind giving me some guidances on this? Also, any recommendations on blenders or juicers?"

Answer: "I would suggest you read Rainbow Green Life Food Cuisine by Dr. Gabriel
Cousens. This book will point you into the right direction. I would recommend you eat a high veggies, moderate nuts and seeds, and low fruit raw diet. The best blender in my opinion is the Total Blender. A really good juicer is the Solostar II juicer or the Samson 6n1 juicer."

Question: "I'm transitioning to raw and had a few questions. Number one is about the amount of nuts consumed. From other sources I'm finding it's rather limited but would like the real recommended amount. Also, what is the deal with soaking? Must it be done for eating them plain? Last but not least how in the world do you get enough calcium. I only get like 30% a day. What raw foods have a high amount?"

Answer: "I would say about 1/3 to 1/2 cup per day is normal. Soaking is good if you will be making a nut milk or consuming a lot of nuts in one sitting. Soaking will make the nuts more digestible. If you are only to eat a handful of nuts/seeds, it is not necessary to soak. You can get plenty of absorbable calcium from dark green leafy veggies, nuts and seeds, sprouts, black sesame seeds, green juices, dried fruits."
