Kale is known botanically by the name Brassica oleracea variety acephala which
translates to mean "cabbage of the vegetable garden without a head."
Kale is one of the most primitive cabbages, but is able to grow in northern
climates where more delicate members of cabbage cannot. More sophisticated cabbage
forms have heads of tightly packed leaves, and/or other enlarged edible portions,
which give higher crop yields and so more efficient land utilisation. Until
the end of the Middle Ages, kale was the common green vegetable in all of Europe.

4. Gourmet & Simple Recipes by Alex Malinsky
"Fried"
Onion Rings
1 large sweet or spanish onion cut into rings
1st coating
4 tbs. olive oil
2 tbs. water
Sea salt to taste
2nd coating:
1 cup ground golden flax seeds
1/2 cup ground unsoaked almonds
1-2 tsp. paprika
Sea salt and pepper to season
How to: Take each onion ring, dip it into the 2nd coating, then into the 1st
coating and then back into the 2nd coating. Your goal is to get as much of the
2nd coating as possible. Once you have achieved that, gently take the the coated
onion rings and put them on dehydrator trays (without teflex sheets) and dehydrate
the rings for about 10-14 hrs at 105 degrees F. or until crispy. Serve them
with a tangy dipping sauce.
Tangy Dipping Sauce
1 cup macadamia nuts (soaked for 2-4 hrs)
1/2 cup pine nuts
1-2 tbs. lemon juice
2 tbs. soaked sun dried tomatoes
1/2 tsp. cayenne pepper
Sea salt to taste
Add everything in heavy duty food processor or a high speed blender and process
or blend till smooth and creamy. Add a little water if needed. Scoop out the
mixture into a bowl and garnish it with chopped cilantro and diced red bell
pepper. Serve aside warm onion rings.
Kreamy Kale Chowder
1 head kale ( preferably dino kale) chopped
2 large avocados
1 tbs. almond butter
3 dates or 2 tbs. soaked raisins
3 tsp. lemon juice
2 cups pure water or celery/cucumber juice
very small piece of garlic
Sea salt to taste
Blend everything till smooth. Add more water if needed.
Garnish the top of the chowder with diced veggies. (red onion, avocado, tomato,
parsley)

Growing up in Los Angeles, living in the Mission in San Francisco and traveling
to beautiful Mexico made me truly appreciate great Mexican food and culture!
This inspired me to create an entire RAW Mexican Menu and now there is the healthiest
Raw Organic Mexican Menu! This particular recipe is very versatile because you
can use this “Nacho Cheese” Pine Nut Sauce in unlimited ways. It
has no corn but it tastes like it does and is even creamier while also having
that nacho cheese flavor too. Everyone has been raving about this new never
before seen recipe and I get huge requests for it.
4 Servings
4 Pieces of Kale
“Nacho Cheese” Pine Nut Sauce:
2 Cups of Pine Nuts
1 Tablespoon of Turmeric
2 Tablespoons of Hawaiian White Miso
Sea Salt
½ Lemon (optional)
¼ Cup Water
Diced Tomatoes, sliced Olives, small Pineapple chunks for garnish
In a Blend-Tec Blender add water first, then the pine nuts, turmeric, miso, sea salt, a few drops of lemon (optional) then blend for 2 to 3 minutes for a chunkier consistency and longer for a smoother finer blend. Fill the kale pieces with this “Nacho Cheese” Pine Nut Sauce and you can use a spoon to spoon the mixture into the kale pieces. Add chucks of tomatoes, pineapple and olives and you have an instant Fiesta. Ole! The Kale looks like corn husks and the sauce is the Tamale. You can also add some guacamole and salsa on the side.
Tropical
Bliss Cake
recipe by Joseph Custer
Flour:
2 cups walnuts
2 cups almonds
8 dates
3 T mesquite meal
Process Almond to fine flour. Add the rest of the ingredients and process well.
Lemon Cream:
1 ½ cups of macadamia nuts
(soaked over 8 hours)
½ cup honey
1 lemon juiced
Process in blender, add water as needed.
Icing:
Meat of two young coconuts
¼ cup coconut water
1 cup pine nuts
¼ cup honey
Process in blender.
Put a thin layer
of flour mixture on the bottom a casserole dish and press lightly.
Pour lemon cream on the first flour layer and add sliced bananas. Top with a
second layer of flour.
Add a layer of sliced mangos and papayas. Add next layer of flour.
Top with icing and add chopped mangos and papayas. Top off with shredded coconut.
Place in refrigerator for a couple of hours to set up.
Earth Balls by Alex Malinsky

1 cup walnuts (unsoaked)
1/2 cup sunflower seeds
3 tbs. raw cacao powder
10 moist dates
2 baby bananas or 1 medium sized banana
1 tbs. dark agave nectar (optional)
1 pinch of sea salt
In a large food processor add the walnuts, sunflower seeds, cacao powder, and
salt. Process until fine. Next, add the dates, bananas, and agave nectar. Process
the mixture until the consistency of fudge. The mixture will be very thick and
sticky. With damp hands, take a small amount of it and roll it into balls. Set
on a plate, sprinkle with a little bit of mesquite pod meal and devour! You
may also coat these balls in dried coconut, raw cacao powder, or chopped pistachios.
YUM!

Dental Health on the Raw Foods Lifestyle! by

Here are some things you can do to prevent tooth decay, gum disease and strengthen your teeth!
Brush your teeth
with an ultra soft tooth brush.
-So you won't weaken or damage the enamel.
Brush your teeth
1-2 hrs. after you eat.
-When you begin to chew, chew, chew, your enamel weakens. When you brush your
teeth after a meal you will literally "brush' the enamel off.
Chew leafy greens
and vegetables
-Which massage the gums and teeth and produce saliva which will alkalize the
environment in your mouth
Use a waterpik
(I prefer the hydrofloss)
-To get little particles out of your gums, if you don't get them out, they will
decay, which produced an acidic environment in your mouth.
ALWAYS rinse your
mouth with pure water after a meal, no matter if you just finished eating a
salad.
-To neutralize the acidity in your mouth.
Eat ripe fruits
and nuts
-Unripe fruits are too acidic and will weaken the enamel which will make your
teeth prone to cavities.
Minimize consumption
of overly sweet fruits and dried fruits.
-Too much sugar and not enough minerals will rob your body of minerals that
are needed to balance the acidity in your mouth.
Soak your nuts
and seeds before eating.
-Soaked nuts are easier on your digestion and teeth.
Eat a light meal
3-4 hrs. before you go to bed.
-Eating a meal just before you go to sleep will probably not digest properly
and will create an acidic reaction.
Eat breakfast
-Most raw food people that skip breakfast tend to eat more in the evening, thus
creating a lot of acidity in the stomach and in the body.
Don't sip
-I know it's best to slowly sip your juices but if that juice is highly sweet,
it will weaken your enamel over a period of time, so drink it quick, rinse your
mouth and chew on some leaves. Or, dilute the juice with water.
Floss
-Flossing is great. Use celery strands...just kidding. Flossing is necessary
to remove the plaque that forms in between the teeth each day. Plaque consists
of germs that cause tooth decay and gum disease. Flossing once a day, before
you go to bed at night will help to reduce tooth decay and gum disease.
Salivate
-Saliva produces vital minerals to keep your teeth and gums healthy and alkaline.
Drink alkaline
tea before bed
-This will create an alkaline environment in your mouth and body. Simply, take
2 tsp. of dried sage or nettles and emerge them in warm water (about 105 degrees)
let this mixture steep for 10 minutes, strain, and drink. Don't use anything
to sweeten it. Well.. you can use fresh stevia leaves if you have some.
The overall message here is to create an alkaline environment in your body and reduce the acidity as much as possible.
Common questions I receive about dental care on the raw foods lifestyle:
What do you
think about tooth soaps?
-I think they are toxic to a degree. Yes, they do help many people however in
the long run I don't recommend them. Most of the tooth soaps contain saponified
oils. A Saponified oil is a result from the careful combining and continuous
stirring of water, oils and sodium hydroxide, a process that
initiates a chemical reaction that produces heat. Most likely these palm, olive
and coconut oils are all heated to high temperatures before they get saponified.
I think we all know that cooked oils are some of the worst substances for our
body. SO why brush your teeth with them?
Sodium
hydroxide can react violently with water and numerous commonly encountered
materials, generating enough heat to ignite nearby combustible materials. Contact
with many organic and inorganic chemicals may cause fire or explosion. Reaction
with metals releases flammable hydrogen gas. Sodium hydroxide in solution is
EXTREMELY CORROSIVE. It can cause blindness, permanent scarring and death.
Still want to use tooth soap? I didn't think so.
What do you
think about root canals?
Don't get them. If you have root canals in your mouth, check up on them often.
They leak very easily and cause a huge burden in your body. Some dentist offices
still put a tiny bit of mercury into the root before doing root canals. Terrible.
What should
I brush my teeth with now?
Brushing your teeth with a solution of celtic sea salt, pure water, and essential
oil of lemon or grapefruit is great. Another favorite of mine is coconut oil
mixed with tea tree oil. Very healing and antiseptic. A line of raw vegan tooth
care products is in the works. More info about them will be in the next issue
of RawGuru's newsletter.

Raw Food and Teeth by Doug Walsh
A lot of people eating a raw diet have trouble with their teeth and receding gums. I think this mainly has to do with people eating too much fruit. There are schools of thought that promote fruit as the ideal food for humans. Fruit is the ideal food for humans living in the Garden of Eden with a Garden of Eden consciousness. Our bodies are a reflection of our consciousness. We are no longer living in the Garden of Eden, most of us experience extreme stress, and fruit is not what it used to be. Thus, most of us need to look at other foods to stay balanced in the modern world.
Fruit has been hybridized over and over again to produce sweeter varieties. The modern red delicious apple is much sweeter than its original non-hybridized version. Hybridized fruit is nutritionally unbalanced and lower in life-force than the wild varieties. Many fruits are even lacking the seeds (life force) necessary to grow into fruit plants. To make matters worse, these nutritionally unbalanced fruits are picked weeks before they are ripe so they can be shipped around the world without rotting. Fruits picked before they are ripe have not extracted the full compliment of nutrients from the plants on which they grew. Thus, most grocery store fruits are nutritionally unbalanced and deficient in essential nutrients. These fruits are acid-forming in the body instead of alkalinizing. It is best to eat locally grown fruits in season. Stay away from seedless fruits.
Also,
some people do not metabolize fruits well and need higher protein diets to keep
their bodies alkaline. See Gabriel Cousins book “Conscious Eating”
for a discussion of metabolic types. Gabriel’s work is the science behind
the statement that our bodies are a reflection of our consciousness. Every body

Eat Your
Vegetables

When your mother told you to eat your vegetables, she probably didn't realize just how good they really could be for you. So believes a new group forming in the South County area called the Raw Food Group.
The raw food enthusiasts offered the public a look-see recently at how far raw food preparation has come when it presented a Mexican raw food dinner at the Venice United Church of Christ. Approximately 40 people attended the event to not only learn how raw food can benefit them, but also how to prepare a full course dinner made entirely of raw food. It was both an amazement and a delight. Chefs for the evening were raw food specialists Johanna Farias of Sarasota and Alice Gilmartin of Venice. Gilmartin is hoping to create enough interest in raw foods in the Venice area to offer monthly meetings and potlucks. The pair prepared the entire meal, which included a salad, soup, entree and dessert without baking, broiling, boiling, frying, steaming or microwaving.
"I try to make the foods that people are familiar with such as tacos," said Farias, adding, "only I make them using only raw foods."
Why only raw foods?
"It's all in the enzymes," said Gilmartin. "Enzymes are essential to all activity in living organisms. By eating foods raw, you are keeping the enzymes intact for your body to digest and use to regain health and vitality."
Gilmartin believes that there are many more people open to eating a raw food diet now than just a decade ago.
"A hundred years ago, Americans were living much more naturally and eating foods that were, on the whole, acquired locally," said Gilmartin. "As Americans are looking for more ways to achieve better health there is a growing interest in a raw food lifestyle."
Farias, who is raising her three children on a totally raw food diet, is writing a book titled, "Raw Babies," to help other mothers make the decision to go natural with their children.
"I'm not fanatical," said Farias, who is in charge of a raw food group that meets in Sarasota. "It is important for people not to be extreme when changing their lifestyle. Sometimes you have to take things slowly and adjust to the change."
Gilmartin agrees. She has used an 80 percent raw food diet on her mother who was suffering from diabetes, arthritis pain and more.
"In just three
weeks, I saw her balance her sugar levels, relieve constipation, and even her
wrists were symptom free...

Raw food vs Cooked food
ENZYMES: The tiny and enormous difference between raw and cooked foods
Virtually all chronic degenerative diseases are caused or aggravated by digestive problems. After the most extensive study on nutrition ever undertaken by the government, the U.S. Senate Select Committee on Nutrition and Human Needs concluded in its 1978 report entitled "Diet and Killer Diseases," that the average American diet is responsible for the development of chronic degenerative diseases such as heart disease, arteriosclerosis, cancer, diabetes, stroke, etc. Many of the most common health complaints revolve around a 20-foot, mucus-lined tube that directly interfaces us with our environment. This is no mystery: This is the gastro-intestinal tract, affectionately abbreviated "GI." The job of the GI is to alchemically transmute the food we eat into our flesh, blood, actions, thoughts and feelings... with a little help from our friends the salivary glands, the pancreas, the liver, and most importantly RAW FOOD -- all of which provide (now we're getting to the point) ENZYMES.
Enzymes are delicate dynamos. Delicate because they are destroyed by temperatures over 118 degrees (some by as little as 105 degrees), which means that they may not survive even light steaming. Dynamos because they are powerful biochemical catalysts; they speed burning or building reactions in the body according to need. They are specialized proteins, often with long complicated names ending in -ase.
The three primary digestive enzymes are protease, lipase and amylase which digest, respectively, protein, fat (lipids), and carbohydrates (which includes sugars). Amylase comes from the salivary glands: carbohydrates start digesting right in our mouth. Have you ever chewed a piece of bread or potato for an extra moment before swallowing, and tasted how sweet it is? (It is a good idea to chew our foods thoroughly; literally making juice in our mouths before swallowing.) Lipase is synthesized principally in the liver and protease comes from the pancreas.

The image that most readily pops to my mind when envisioning a "raw foodist" is that of a grouchy, low-blood-sugar hippie with a skewed perception of health and nutrition, and some sort of hemp garment twined around his or her emaciated middle. As fadlike as raw foodism may seem, the carrot-crunchers who practice what is called "living nutrition" are among the healthiest and most energetic people this skeptic has ever met.
But if burritos are out, what, then, does a raw foodist eat? As Marie Antoinette herself might have said: Everything, particularly cake. But before skipping directly to dessert, here's some metaphoric meat.
The basic tenet behind raw foodism is that heating any food above 118 degrees Fahrenheit will cause the enzymes in it to cease activity. This means the pancreas must provide its own digestive enzymes, thus slowing the entire digestive process. Therefore, raw-foodists keep their heating (and freezing) to a minimum and their organs relaxing to the maximum.
If going whole-TVP-hog doesn't sound appealing, simply sprouting seeds and grains at home and adding them to your diet is an excellent way to maximize food's nutrition. A sprout (a tiny, complete version of the whole plant) increases in nutritional content as it grows: a sprouted pea has four times the amount of vitamin C as a dried pea. Soaking seeds and nuts before sprouting them releases enzyme inhibitors that have been stored in the plant while it is dried, and make the food more easily digestible.
A raw-foods diet, if done properly, is far from lacking in nutrients or noshability. Avocados provide plenty of essential fatty acids, as do almonds and other nuts. Tomatoes and citrus fruits are powerhouses of vitamin C, and sprouted lentils, quinoa and beans can have more protein than red meat. Sea vegetables such as kombu (kelp) and nori (the stuff that gets wrapped around sushi) are well-known ways to get B vitamins and iron; most health food stores sell such vita-rich lesser-known seaweed as wakame as well. There is even raw food "junk food" on the market; several companies (such as Govindas, out of San Diego) produce such packaged delicacies as Bliss Bars, Hemp Bars and cracker-like snacks.

Space Vegetables
BEIJING, Jan. 6 -- The first space vegetables cultivated by Shenzhen Nongke
Group Corporation (SNGC) are expected to become common dishes on city dining
tables in March. On Sept. 27 last year, 17 species of vegetable, fruit and flora
seeds, chosen by SNGC, were sent into space with the country's 20th recoverable
science satellite, which returned to the earth 18 days later. “Under the
physical conditions of outer space such as radiation, low gravity and vacuum,
the seeds can take on astronautical mutagenesis, which alters the germ plasma
of crop seeds,” said SNGC’s associate researcher Jin Xing.
