Have you heard of the garlic diet?
You don't lose much weight, but from a distance your friends think you look thinner.

-What is the difference between fruits and vegetables?
In 1893 the United States Supreme Court tried to clarify the differences between a fruit and a vegetable by saying that vegetables are eaten as part of the main course of a meal, but fruit is eaten as an appetizer or dessert, or for a snack.

But as with so many words, there is one definition, which is correct according to the dictionary and another one which people use in everyday life. Sweet corn, for instance, is eaten as an appetizer, but most people would consider it a vegetable.

In botany, a fruit is the ripened ovary of a plant. (The ovary is the part of the plant where the seeds are kept.) So, strictly speaking, an acorn is as such a fruit as an apple. But, if you went into a store and asked for fruit, the store-owner would not offer you acorns. When we talk about fruit in everyday life, we mean the juicy fruits like apples, grapes, oranges and melons.

Vegetable' has even more meanings than "fruit". The word covers any kind of plant life, even including trees. But, again, in everyday life vegetable means food like lettuce, carrots, cabbage and sprouts.

Easter Salad

3 cups assorted baby lettuces
1 bunch watercress, stems removed
1 large pink grapefruit
1 small avocado, peeled, pitted, and cut into 1/2-inch cubes
1 small red papaya, peeled and cut in half
1 small red onion, skin removed and sliced into 1/8-inch-thick rounds

How to: Place all the baby lettuces, and watercress in a large bowl, and toss to combine. Transfer to a serving platter. Cut both ends from the grapefruit. Starting at one cut end, slide a paring knife between the peel and the pulp, removing the entire skin and the outer membrane. Use the knife to lift out the sections. Arrange the sections down the middle of the greens in a row. Place the avocado cubes to one side of the grapefruit sections. Remove the seeds from the papaya, and reserve for vinaigrette. Cut papaya into 1/2-inch-thick slices, and arrange slices on other side of the grapefruit sections. Top with onion rounds. Drizzle the vinaigrette (recipe below) over the entire salad, and serve immediately.

Papaya Citrus Vinaigrette
5 tbs. olive oil
5 tsp. lemon juice
5 tsp. orange juice
1/2 tbs honey or agave nectar
1/2 teaspoon sea salt
Seeds from 1 small red papaya alt and freshly ground black pepper

How to: In a mixing bowl, whisk together 1 tablespoon olive oil and lemon juice. Whisk in another tablespoon olive oil. Whisk in orange juice and another tablespoon olive oil. Whisk in honey or agave, salt, and remaining 2 tablespoons olive oil. Gently stir papaya seeds into salad dressing. Use immediately, or store in an airtight container in the refrigerator for up to 1 day.

Carrot, Mint and Raisin Salad

1 lb. large sweet carrots, peeled
3 tbs. raisins
2/3 cup mint leaves, cut into 1/4-inch julienne
2 tsp. lemon juice
1 tbs. olive oil
Sea salt

How to: Grate carrots through the large holes of a box grater or with a food processor using the grater blade. In a medium bowl, combine grated carrots with raisins, mint, lemon juice, and olive oil. Season with sea salt, and toss to combine well.

Spaghetti and Meatballs (Savory Nut Balls)

Spaghetti
2-4 yellow and green zucchini cut on a saladacco, toss in a little lemon juice and set aside.

Sauce
2 cups cherry tomatoes
1 cup sun dried tomatoes (soaked for 1-2 hrs)
1 tsp. tomato concentrate
2 dates (soaked for 2 hrs)
3 tbs. olive oil
2 cloves garlic
3 tbs. fresh parsley
1 pinch fresh oregano
1 handful fresh basil
1 tsp. Italian seasoning
1 tsp. sea salt

How to: Blend everything till smooth. Add tomato soak water if you want the sauce thinner. Toss with "spaghetti" and serve with savory nut balls.

Savory Nut Balls

1 small red onion
1 bell pepper
2 carrots
1 cup burdock puree (you can grate it on a very fine grater, or blend it with the water); The burdock root CAN NOT be substituted, this is what gives the burger a meaty flavor
1 cup soaked almonds,
1/2 cup soaked sunflower seeds
1/4 cup walnuts
2 cloves garlic
1 stick celery (minced)
Pinch of turmeric
1 tsp. cumin
2 tsp. dried cilantro or 1-2 C fresh

How to: Process everything in a food processor. Add a little water if needed. Lay a piece of parchment paper on the table, put your burger mixture on top, get another piece of parchment and put it on top of the mixture, using a rolling pin or the palms of your hand, roll the dough to 1/2 inch thickness. Then using a cookie cutter or a cup cut out patty shapes, and place the patties on teflex sheets, dehydrate in the Excalibur Dehydrator for 2 hours at 145 degrees (only in the excalibur at this temperature). Then bring the temp. down to 115 degrees and continue to dehydrate until a desired consistency.

Strawberry Tibetan Goji Berry Smoothie - from Raw In Ten Minutes by Bryan Au
1-2 serving

1 fresh young coconut
1 cup strawberries chopped into small pieces
2 tbs. Agave
1/4 cup soaked Tibetan Goji Berries

How to: Carefully scrape the coconut flesh and pour the coconut water into a bowl and take out all the splinters and fibers then pour into a Blend-Tec Blender, then add all the rest of the ingredients and blend to desired consistency. If you do not have access to fresh young coconuts then you may also use almond milk instead. The Goji berries give this smoothie such a vibrant unique energetic flavor that will delight you while giving you amazing super vitality.

Raw Food Vegans Thin But Healthy, Study Finds

WASHINGTON (Reuters) - People who adhere strictly to raw food vegetarian diets are thin but have surprisingly robust bones, U.S. researchers reported on Monday.

Although nutritionists and the food industry have warned that a diet without dairy foods can lead to the bone-thinning disease osteoporosis, the team at Washington University School of Medicine in St. Louis found the vegans they studied had many of the signs of strong bones.

"We think it's possible these people don't have increased risk of fracture but that their low bone mass is related to the fact that they are lighter because they take in fewer calories," Dr. Luigi Fontana, who led the study, said in a statement.

"Raw food vegetarians believe in eating only plant-derived foods that have not been cooked, processed, or otherwise altered from their natural state," Fontana's team wrote in this week's issue of the Archives of Internal medicine.

"Because of their low calorie and low protein intake, raw food vegetarians have a low body mass index (BMI) and a low total body fat content. It is well documented that a low BMI and weight loss are strongly associated with low bone mass and increased fracture risk, while obesity protects against osteoporosis."

Fontana's team studied 18 strict raw food vegans aged 33 to 85. All ate a diet that included unprepared foods such vegetables, fruits, nuts, and sprouted grains. They had been on this diet for an average of 3.6 years.

Raw “Will” Power

I lost my spleen in a bike accident when I was 9. Before then, I never really took care of my health more than the average kid (which isn’t much), or thought twice about what foods I ate, and if they were really doing my body any good. But, after my operation, when the doctor told me that my immunity to disease was at risk without a spleen, everything changed from there. I didn’t want to “make up for” my missing spleen with a wide array of different drugs and vaccines; I wanted to find a natural, healthful solution. And that’s exactly what I did, despite being faced with much adversity and trials. This “turning tragedy into triumph” story really brings meaning to the phrase “you have to get worse before you can get better”.

Faced with the alternatives of vaccines, which I had, in recent years prior to the accident, begun to suspect were other than natural and healthy, I began to search for ways to increase my health and immunity, naturally, without drugs. By the time I was 14, I was well on my way to positive change. After lots of reading on the internet I started to experiment with my diet. I first became a vegetarian, then a vegan, and surprisingly, soon enough, became a raw foodist at age 16, eating a high percentage of raw foods that have not been cooked or heated, excluding all processed foods. I was experiencing a level of health unknown to me. All was well enough, until I read some romantic literature on an even more restricted diet- fruitarianism. The diet called for one to eat exclusively fruits, including nuts and seeds, and botanically fruit vegetables (zucchini, cucumber, etc.) but excluding the actual plant (roots, green-leafy vegetables, etc). Later I learned the true importance of greens. My brother also influenced my decision to start on the fruitarian path with his beliefs in respecting the life of a plant. This is the step in which I took my positive changes of diet over the edge, into a negative and most tragic series on unfortunate events…

Cooked foods vs. raw debated
HEALTH: Some officials caution against the no-cooking lifestyle, but others embrace it

Teshna Beaulieu typically starts her day with watermelon or sliced avocados and cucumbers topped with lemon juice, sea salt and tomatoes. Her beverage of choice is fresh coconut milk.

The East Chatham, N.Y., chiropractor's routine doesn't change much as the day goes along. She eats a variety of salads for lunch and dinner, often adding fresh vegetables or seaweed. She snacks on nuts. Beaulieu almost never uses her oven or stove. The blender is the kitchen appliance she turns to most.

Welcome to the raw food diet. Beaulieu prefers to call it the raw food way of life, because diet implies a weight-loss program. For Beaulieu, who started eating raw foods 15 years ago, and others, it's a lifestyle choice.

"As the years go by I do it more and more. I feel better with it," she says. "When I eat raw food I don't feel tired after a meal. When I eat cooked food, I feel heavier and more tired."

Raw food means exactly that -- almost. Proponents of a raw food diet primarily eat uncooked fruits and vegetables. They also consume nuts and grains, oftentimes made edible with soaking that in some cases causes sprouting. However, raw food enthusiasts use a dehydrator to "cook" certain foods.

Don't heat it, eat it: Raw food is the newest spinoff from natural and organic movement

Elena Balletta is keeping things fresh, whole and raw in her kitchen both at home and at work.

As a pastry chef for Pure Food and Wine, a gourmet vegan and raw food restaurant in Lower Manhattan, the South Beach resident blends sprouted buckwheat, maple and organic cinnamon to make the base for a crispy cereal.

On the dessert menu, you will find apple pie, ice cream, ganache tart and coconut cream pie among the offerings. But you won't find any milk, eggs or dairy items.

You can be sure, Ms. Balletta said, "there's no cardboard here."

Foods are full-flavored and nutrient-rich. Desserts are tasty and guilt-free.

Daily she balances the flavors of seeds, nuts, spices, grains and unrefined sweeteners to make desserts and sweets, like chewy almond crunch bars and a version of brownies from her childhood.

NOTHING IS COOKED ABOVE 118 DEGREES

Her experience at the restaurant, where nothing is cooked above 118 degrees, is linked to the current raw food culture. It's a spinoff from the natural-food movement which is growing in popularity today, and dates back to the plant-based cuisine that first surfaced in various American cities in the mid-1980s.

In New York City, Dr. Annemarie Colbin, along with the Natural Gourmet Cookery School she founded, was a leader in the movement that linked food intake with health. Emphasis, then as now, is put on whole, fresh, unprocessed, organic foods.

Although raw food hasn't reached the heights that its proponents hoped for, the interest in unprocessed foods and organically grown crops has grown dramatically in the past decades. Organic farming has increased by 30 percent in New York State. And, an ever-growing number of major food manufacturers are enticing consumers with newly developed, true-to-nature products.

Ms. Balletta has long been a proponent of the health aspects of food and of being a vegan. She chose that direction in her culinary training and now she's involved in it within her professional career.

In her spare time, she experiments with recipes. Recently she worked on a lavender/walnut cookie and in reinventing the pumpkin pie.

WHY ALL SHOULD EAT ONLY RAW FOODS ALWAYS

When food is cooked above 118 degrees F for three minutes or longer, its protein has become coagulated, its sugar has become caramelized, its natural fibers have been broken down, which means it will take longer to move through the intestinal tract, 30% to 50% of its vitamins and minerals have been destroyed and 100% of its enzymes have been destroyed. Cooked food depletes our body's enzyme potential and drains the energy we need to maintain and repair our tissues and organ systems and shortens our lifespan.

Dr. Virginia Vetrano writes about an authority who contends that irritation from putting extremely hot foods into the stomach, can cause cancer. Dr. Vetrano also writes that "Heating any food, destroys much of its vitamin, mineral, and protein content and poisonous inorganic acids are formed. The all uncooked diet is most healthful."

Marilyn Willison, of Hippocrates Health Institute, writes, "We should not cook our food. During this apparently harmless process, vital enzymes are destroyed, proteins are coagulated (making them difficult to assimilate), vitamins are mostly destroyed with the remainder changing into forms that are difficult for the body to utilize, pesticides are restructured into even more toxic compounds, valuable oxygen is lost, and free radicals are produced. According to Viktoras Kulvinskas, nutrient losses can be as high as 80% or more. Other studies suggest that cooked proteins (coagulated) are up to 50% less likely to be utilized by the body."

Dr. Francis M. Pottenger Jr., wrote about his experiments with 900 cats over a period of ten years. Pottenger fed some of the test cats raw meat and other test cats, he fed cooked meats. Pottenger wrote, "Cooked meat fed cats were irritable. The females were dangerous to handle, occasionally biting the keeper..." The cooked meat fed cats suffered with "pneumonia, empyema, diarrhea, osteomyelitis, cardiac lesions, hyperopia and myopia (eye diseases), thyroid diseases, nephritis, orchitis, oophoritis (ovarian inflammation), arthritis and many other degenerative diseases."
