Lavender Goji Limeade

2 cups distilled or pure water
2 lemons (juice only)
3 limes (juice only)
2 tbs. agave nectar
2 tsp. goji berry powder
1 tbs. fresh lavender leaves (chopped)

Mix everything together in a glass bowl. Let the lavender leaves steep in the liquid for 1 hour at room temperature. Strain through a nut milk bag. Chill for a few hrs before serving. Garnish with a sprig of lavender.

 

Free Form Kale Lasagna

Basil Tomato Sauce

1 pint cherry tomatoes
2 tbs. tomato powder
2 handfuls fresh basil
1/2 bunch parsley
1 tbs. olive oil
1 tsp. fresh oregano leaves
1/2 lemon (juice only)

Garlic & Herb Cheese

1 cup pure water
1 lemon (juice only)
1 tbs. agave nectar
1/2 cap pine nuts
1 tsp. dried basil or oregano
1/2 cup really raw cashews or macadamia nuts
1 tsp. garlic powder
1 clove garlic
1/4 tsp. or to taste Celtic Sea Salt

Toppings: Shredded dino kale, collard leaves, thin sliced tomatoes, avocado slices, vidalia onion slices

Prepare the tomato sauce by blending everything and set aside. Prepare the cheese by blending everything till creamy and smooth. To make the lasagna place one collard leaf on a plate. Add cheese on top some shredded kale and a tomato slice. Place another piece of collard and top it with tomato sauce, avocado slices and onion. Add another collard leaf and top it with cheese and tomato sauce and more shredded kale. Repeat this process however many times you would like. Garnish the very top with a basil leaf.

Cheezy Kale Caesar Salad



1 bunch green kale (chopped)
1/2 bunch dino kale (chopped)
1/2 head romaine lettuce (chopped)
2 tbs. minced leek

Dressing

3 /4 cup pure water
1 lemon (juice only)
1 tbs. agave nectar
1/2 cap pine nuts
1/2 cup really raw cashews or macadamia
1 clove garlic
1 tsp. dulse or nori flakes
1/4 tsp. or to taste Celtic Sea Salt

Add all the greens and minced leek into a large bowl. Prepare the dressing by blending everything till creamy and smooth. Taste and adjust any seasoning if needed. Add more agave if it needs more sweetness, more lemon juice if it needs to be more acidic.

Pour the dressing over the greens. Massage the dressing into the greens until everything is nicely covered. Taste and season with salt if necessary.

Mango & Mamey Mini Pie

Crust

2 cups pecans
3 tbs. agave nectar
1/2 cup dried mulberries
1 tsp. mango powder (optional)
1/2 tsp. Salt
1/2 tsp. vanilla powder

Put everything in the food processor and process till combined and can form into a ball easily. Put in the fridge until the filling is finished.

Filling


1/2 ripe mamey (cubed)
2 ripe mangos (cubed)
1/2 cup tangerine or orange juice
1 tbs. lemon juice
1 handful of cashews or macadamia nuts
2 tbs. agave nectar
1/4 tsp. salt

Blend everything until smooth. Add a little more juice or water if needed.

Toppings:
Mango Slices
Crushed mac nuts with a little agave and vanilla powder

Form the mini pie on a plate. Start with putting the crust down onto the plate. Raise the corners a little and press the middle part down. Spoon the filling on top. Add mango slices and top with crushed mac nuts. Chill before serving or eat as is.
