Everyone following a raw or live food diet should eat a variety of foods every single day! This is not only essential but crucial to sustaining a raw food lifestyle for long periods of time. When you eat a variety of foods you are getting an array of vitamins, mineral and other nutrition needed for your body to function properly and stay balanced. Below is a list of foods that you should follow as a guide to hopefully help you be creative and never be bored on this lifestyle.

Did you know color is the byproduct of the spectrum of light, as it is reflected or absorbed, as received by the human eye and processed by the human brain. Colors can effect not only your mood but also how they play a role in your mind and body.


 Red - The color of power, vitality, motivation, strength

Cranberries, damsons, Red Incan Quinoa, raspberries, red apples, red cherries, goji berries, red currants, red plums, cashew apples, rhubarb, rose hips, strawberries, watermelon, beet root, eggplants, Jerusalem artichokes, mustard and cress, radishes, red cabbage, red chilies, red peppers, red-skinned onions, red peppers, sea vegetables (red and black varieties), spinach (green with red stems), tomatoes, watercress and any vegetable containing iron, such as horseradish or parsley, cayenne, hibiscus flowers, mint, mustard, peppermint, pineapple sage, red, white and black pepper, rosemary, thyme, ginger, nettles, rosemary, and watercress.

Carrot, sweet potato, butternut squash, pumpkin, turnip, apricot, cantaloupe, mango, tangerine, nectarine, peach, ginger, turmeric, bell pepper, hot pepper, sweet corn, mandarin, yam, lucuma, mangoes, Hunza raisins, camu camu berries, kumquats.

 


The more than 500 members of the Central Florida Raw Food Connection, including many from East Orlando, learn how to make raw dishes like kumquat cheesecake and no-bake vegan spaghetti and meatballs, ask questions about vitamin deficiencies and take field trips to events like mango festivals.
Cafe 118Raw is a diet consisting mostly of raw and foods cooked at temperatures no higher than 125 degrees (degrees vary from 105 to 125 depending on personal belief). The premise of the diet is that the living enzymes in raw food that help in digestion are damaged when the food is cooked.

Some reported benefits to the diet are increased energy and stamina, weight loss, and even relief from such afflictions as high blood pressure and cancer.

Olive Mackey’s diet consisted mostly of meat and potatoes. She even avoided lettuce and tomatoes on her cheeseburgers because she hated the way they slid off the bun. She regularly visited a chiropractor for achy muscles and a myriad of health issues including high blood pressure, high cholesterol, poor vision and dull hearing.

Seven years ago she attended a lecture on the 10 most deadly foods — all of which were featured stars in Mackey’s diet. She was determined to change.

In searching for the best diet, she stumbled upon raw foods. She tried the diet for 30 days, during which time her body underwent an intense transformation. She shed 20 pounds — 117 overall since adopting the diet — was able to stop taking her high blood pressure medication, strengthened her hearing and vision, and had a ton of energy. She remembers the “fabulous” taste of cooked food, but said the health benefits of raw food far outweigh the flavors lost. “I thought raw food was only salad. I could not imagine what else there was,” she said. The goal is to make it tasty, said Joe Diaz, owner of Café 118, a Winter Park restaurant that does not cook food over 118 degrees. The restaurant’s concept is to make raw food available and appealing to all walks of life — herbivores and carnivores, alike. He hopes to make raw food the next sushi craze.

“Years ago a lot of people did not eat at sushi restaurants because it was just a slab of fish on your plate,” he said. He found a way to make raw more appealing to the average consumer, successfully luring in all kinds of people with dishes like vegetable lasagna, zucchini and carrot noodle pad Thai, and nut-based mint-chocolate chip “ice cream.”


 Brian Clement Lecture at Leafy Green Cafe


I took a visit to the grand opening of Leafy Greens Cafe located in the heart of St. Petersburg Florida. We were greeted by Denise who handed me a plate of hors d’oeuvres of nut patties with mustard and ketchup and some slivered tomatoes that was very delicious, a stuffed tomato that tasted like deviled eggs and a warm and soft chocolate ball. Brian clement from the Hippocrates Health Institute was there to help with the grand opening. He drew a large crowd and first started to talk about responsibility. Individuals must take their health in their own hands. Depression comes from self loathing. You have the right to be healthy. Love yourself.

He told everyone a story about a lady named Phyllis who came to the Hippocrates Center with osteoporosis. She's a young 94 your old and arrived at Hippocrates looking for her next job. She has been a child prodigy and played the piano extremely well. Brian told her osteoporosis is not a diet issue. She needed to lift weights. She was in disbelief when she heard him say that but later came back to him and said "because I'm paying you a lot of money, I will trust you". After training for everyday (6 weeks) her bone density test improved by 20% which is the recovery phase.

Here are some quick notes I jotted from Brian's inspiring lecture.


1. Release your fears. Fear is the #1 Killer.

2. Reality is nothing more than how you perceive it.

3. You are the creator of reality.

4. We are here to give. Reap what you sow.

5. Make your own decisions and trust yourself.

6. Be responsible. It's all up to you.

7. If you want to be worried watch the news. CNN is better than FOX news. FOX makes up stories.

He also told a story about Senior president George Bush that probably a lot of people have not heard before. Brian Clement was invited to hear Anthony Robbins (currently eats primarily raw foods). Senior George Bush was also there, he told a story of being in the Navy and how he had to bomb cannibals that would eat Americans. During the war, these cannibals thought if they ate Americans they would conquer all. After bombing and killing most of them he flew out of there and they shot at his plane. He landed in water and was in fear. He was so afraid if he went back to shore they would eat him alive. He didn't want to die like this and out of nowhere a US submarine emerged, he swam towards it and jumped in. Once his feet hit the bottom of the submarine he knew he wanted to be president of the US.


Proponents say not cooking can do a body good

 

DEMI MOORE, WHOSE TAUT body and flawless skin belie her 47 years, proudly goes raw. So do Alicia Silverstone and Beyonce, Angela Bassett and Donna Karan. Famed Chicago chef Charlie Trotter has devoted a whole book to the subject.

The raw food movement has become a hot — uh, make that cool — form of vegetarianism that champions uncooked vegetables, fruits, seeds, nuts, grains, beans and seaweed as the staples of a healthy diet.

In recent years, restaurants devoted to raw food have opened around the country. Vibe Cuisine (formerly Veggie Magic) in Sarasota is the closest one to Southwest Florida, but raw fare is cropping up around the area, appearing on restaurant menus, starring in (un)cooking classes and sparking the formation of groups in Fort Myers, Cape Coral and Naples through which members share meals, recipes and information about the raw life.

Mr. Trotter, better known for his cooked cuisine, added some mainstream mojo to the movement with his how-to tome, "Raw" (Ten Speed Press).

Here's the basic premise of the raw, or living foods, diet: Enzymes found in food provide vital energy to the body. When food is heated to more than 106 degrees, those enzymes die, robbing food of nutrients and causing it to become toxic, forcing the body's immune system to fight against it. Eating raw, unprocessed food bolsters the immune system, allowing it to heal and protect the body.

To omnivores accustomed to the standard American diet, called SAD by those who eat raw, the concept can be perplexing since they eat little but salads and fruit uncooked. But inventive raw chefs produce a cornucopia of tasty dishes without benefit of meat or dairy, stove, oven, microwave or fryer.

At recent local raw food gatherings, participants dined on lime-agave margaritas, apple-jicama salad, Kelp salad, spicy mango ginger soup, burritos, apple pie and chocolate-chili brownies, among other uncooked dishes.

More than salad, but not more work

"Raw food isn't just about plain salad," says Charles Marble, who runs Mangroves Health Institute in Naples. "It can be as gourmet as you can possibly imagine."

We are so glad to finally source out some chemical free, organically grown young green coconuts from sunny Florida! These coconuts stay fresh for about 2-3 weeks after you receive them. They can also be kept at room temperature for this time period. These coconuts may not be as sweet tasting as the hybrized Thai coconuts but this is how nature intended them to be. Pure and simple.

Brown Mature Coconuts

Brown Mature Coconuts - Brown or mature coconuts are commonly sold with the already brown dried husk removed. The meat has become more firm and opaque white. It has little or no water inside.



Taste:

: Hard, best grated 
Uses: Decorate desserts, grind into flour.
Pros: Intense coconut taste and high  in good fats. 
Cons
: Hard to crack and take meat out.  Not used much in raw food recipes.

 


Trio of Raw Vegan Ice Cream

Ice cream in the raw

This recipe was inspired by wanting to recreate mint chocolate chip ice cream without the need to use young Thai coconuts. After several tries and an ice cream maker (Cusinart Supreme™ Commercial Quality Ice Cream Maker) I came up with 3 flavorful and melt in your mouth ice cream flavors. If you do not have an ice cream maker you can freeze the mixture in ice cube trays and run it through a juicer. You can also blend it up with a little nut milk. 
 
Ingredients: 

1.Ice Cream Mixture

1 lb. Cashews (soaked for 5 hrs)
1 tbs. Cashew Butter
1/4 lb. melted cacao butter
3/4 cup agave nectar or to taste
1/2 tsp. sea salt or to taste
1/2 tsp. vanilla powder

2 & 3. Mint Chocolate Chunk with Pistachios


This is a review of the new raw cafe 118

 
My brother and I had a great night at Cafe118. We drove 2.5 hrs to check it out and got more than we expected. The cafe is a little hidden in downtown Winter Park. The atmosphere is very modern and clean. The waitress sits us down and we start with drinks. The raspberry lemonade is a sweet and sour concoction of fresh ripe raspberry juice in a base of lemonade sweetened with agave. A perfect drink to start a meal. We also tried the Tropical mint (pineapple, young coconut, agave and mint) which was very refreshing. Everything looked so good on the menu so we tried almost everything they had. The basil wrappers were divine. The wrappers were made with coconut meat flavored with basil and the other with sun dried tomatoes then dehydrated. This made them very pliable, Inside the wrappers was a very smooth cheese made out of pine nuts and herbs.

Spicy 'Bean' Burrito

 Next up was the Spicy "Bean" Burrito with fresh salsa, guac, sour cream and queso blanco. This dish had the right amount of spice and was very flavor rich. The sour cream (Cashews, pine nuts, sea salt) was very refreshing against the spicy blend of seeds in the burrito. The salsa and guac added depth and completed this dish. Very well done.

We also tried the avocado, mango and shitake maki rolls with raw soy sauce and pickled ginger. These rolls we incredible. One of the best dishes at the cafe we thought. It was pleasantly light and bursting with flavors. It has the right amount of spice and sweet in every bite. it was also very elegantly presented.Raw Sushi RollsThe salads at the cafe are not to be passed up.

The mexican chopped salad was my favorite. It was a mixture of mixed greens, sweet corn, avocado, chili chips, fresh tomato and their popular queso blanco which I assume is just a mixture of red bell pepper, Cashews or macadamia nuts and water. It was nicely seasoned and not laden with a lot of oils or avocado.

The arugala salad was very tasty as well. It tasted like a Caesar salad but the base was baby arugala, then tossed with hemp seeds, sun dried tomatoes and a parmesan crisp made from pine nuts.
