Creamy Cauliflower Coconut Smoothie

Description

Watch out bananas, there's a new ingredient in town threatening to take your place as the go-to thickener and creaminess enhancer for smoothie lovers everywhere. And it's a vegetable...cauliflower to be exact. The key to a perfect banana replacement is making sure the cauliflower is frozen first. The result is epic thickness and the ultimate creamy consistency (without the sugar!) Give it a try with this creamy, dreamy, coconut smoothie by Shannon Leparski of The Glowing Fridge.

Ingredients

2 handfuls kale (or spinach)
1.5 cups frozen cauliflower
1 frozen banana
1 tablespoon coconut butter (or almond butter or hemp seeds)
1 scoop plant protein (optional)
1 scoop greens powder (optional)
3/4 cup filtered water
1/2 cup unsweetened vanilla almond milk - (RG tip: preferably home made and raw!)

Methods/steps

1. Add all ingredients to a high speed blender.
2. Blend until smooth and creamy and dreamy!
3. Top with fresh fruit and/or granola.
