Stuffed Red Peppers

2-4 people
2 red bell peppers (cut into sections)
Filling
1 cup soaked sunflower seeds
1/2 pint cherry tomatoes
1 stick of celery
1/2 tsp. each of cayenne powder, paprika, basil, oregano, and garlic.
1/2 small onion (chopped)
2 tbs. lemon juice
1 tbs. olive oil
sea salt to taste
Methods/steps
How to: Put all the filling ingredients into a food processor and process till thick and smooth.
Assembly: spoon 2 tbs. of the filling into each pepper half and garnish with a parsley leaf.

this meal was quite good. i think i added a little to much onion resulting in some interesting heart burn. i mixed it up a little and added my own assortment of spices. the texture of the filling worked well with the crunchiness of a fresh bell pepper.
