The hot sun is shining, and it’s the season for sweet, cold
treats. That means it’s time to start putting together some raw ice creams and sorbets! Here is my simple recipe for banana ice cream that is sure to hit the spot. The great thing about this treat (beyond that fact that it is SO easy to make) is that even your non-raw family and friends will enjoy it. Only a few ingredients and a few brief minutes in the kitchen. Just my style!
First you will need to freeze lots of perfectly ripe bananas. They should be starting to get little brown freckles on them. This ensures the creamiest, sweetest tasting banana ice cream. You will also need a good blender, preferably a Blendtec or Vitamix. You can also run the frozen banana’s through the Hurom Juicer (our favorite here at RawGuru) or Champion Juicer with the blank screen on. This will make a more soft-serve style ice cream. I personally use my Blendtec, this way i can add a few other ingredients like vanilla bean.
Banana’s for Banana Ice Cream
3 frozen bananas
1/2 Cup frozen blueberries (or fresh if you prefer)
1/2 a vanilla bean, seeds only
A teensy bit of water to get the blades going
You can use raspberries, mangoes, papaya, pineapple, basically any of your favorite sweet fruit you’d like to throw into the mix. Or keep it simple with just bananas. Also try making a delicious cacao fudge sauce to drizzle over the top by blending together 1/2 Cup Bali cocoa powder, 1/4 Cup agave syrup, and 1/4 Cup raw cocoa butter (you will need to gently melt this first before blending) or raw coconut oil instead of cocoa butter. Add a pinch of stone ground Balinese sea salt to bring out the chocolate flavor. Garnish with crushed pistachios or pecans. You can also mix in chopped fruit of your liking or mix the nuts into the ice cream.
If you haven’t already tried using frozen bananas to make ice cream, now is the time to try it out! I remember eating frozen bananas like popsicles as a child and this was one of my favorite summer treats. Some things never get old. Happy ice cream making, from your friends at RawGuru!
