Tarragon is a lovely Eurasian perennial herb with a gentle sweet flavor and aromatic scent. Some say the flavor is reminiscent of anise seed. When used properly in recipes tarragon will add an incredible flavor that helps bring out the tastes of the food and other herbs or spices used. Within tarragon you will find phenylpropanoids, estragole, terpenes, anethol, camphene, limonene, and eugenol, among other compounds.
