Pumpkin seeds have a very high oil content at 50%. Four fatty acids - palmitic, stearic, oleic and linoleic - make up 98% of the fatty acid in pumpkin seeds.

Palmitic acid has excellent antioxidant properties - unlike trans fats, palmitic acid is a saturated fat that helps with protein localization in cellular membranes.
