To produce this fine superfood we take raw organic yacon slices and dry them at low temperature (105 F). Then they are ground into a powder while maintaining low temperatures. The powder is mildy sweet. The powder comes from the yacon root, a relative of the sunflower. They have good health properties. Most roots and tubers store carbohydrates as starch – similar to glucose; yacon stores carbohydrate as fructooligosacaride – composed mainly of fructose. The human body has no enzyme to hydrolyze fructooligosacaride, so it passes through the digestive tract unmetabolized, providing few calories. Yacon also acts as a prebiotic. The undigested portion of yacon serves as food for “friendly” bacteria, such as Bifidobacteria and Lactobacillus species, in the colon.
