Irish moss is a red seaweed. Irish moss is a nutritional super star. Carrageenan comes from Irish moss and is used as a thickening agent in many products. Irish moss contains vitamins A, C, D, E and K, vitamins B1 and B2 and is a source of B12. Irish moss contains many elements essential to the human body. Irish moss contains a high content of iodine, calcium, manganese, zinc, bromine, iron and protein and contains significant amounts of calcium and magnesium.

Irish moss can be used is a natural vegan alternative to gelatin. A quarter cup will thicken about two cups of liquid.

At the former Sprouts Cafe' in Atlanta, GA they used to sell a drink called Irsh Moss. It was a thick satisfying chocolate beverage packed with nutrition. This drink was made with Irish moss combined with macadamia nuts, banana, agave nectar, carob and spirulina! It was a great drink. It may still be available through local Atlanta health food stores.
