Raw Organic Yacon Slices (infused with Elderberry Juice) - 4 oz

These Yacon slices are raw and certified organic, have the the benefits of yacon and elderberry combined into one dried fruit treat. They are high in minerals and antioxidants and low in sugar content.

Sweet yacon roots are soaked in elderberry (or sauco) juice and low-temp dried. These delicious sweet slices from the yacon root, a relative of the sunflower, stand alone in their health properties. When infused with elderberry juice, they are boosted with antioxidants and a sweet berry flavor.

Yacon slices come from small organic family farms in rural communities of Peru where unique non-hybridized, heirloom varieties of plants and family traditions passed on for generations create fruits and vegetables of the highest culinary and nutritional quality. They use low-temp specifications and solar dryers to produce dried products that are of the highest nutritional and enzymatic quality.

Yacon is commonly grown and consumed throughout Peru. Locally, the tuber is often chopped and added to salads. Yacon roots contain important quantities of potassium and antioxidants.

Most roots and tubers store carbohydrates as starch - a polymer of glucose; yacon stores carbohydrates as fructooligosacaride (FOS) - a polymer composed mainly of fructose. Yacon slices contain 30-70% (dry basis) FOS and low proportion of simple sugars (e.g., glucose, fructose and sucrose). The human body has no enzyme to hydrolyze FOS, so it passes through the digestive tract unmetabolized, providing few calories. Yacon also acts as a prebiotic. The undigested portion of yacon serves as food for "friendly" bacteria, such as Bifidobacteria and Lactobacillus species, in the colon. Clinical studies have shown that administering FOS can increase the number of these friendly bacteria in the digestive system while simultaneously reducing the population of undesired bacteria. Yacon syrup, pressed from the roots, has a sweet flavor, and is used as an alternative glucose free sweetener and prebiotic with few calories. Other benefits noted with FOS supplementation include increased production of beneficial short-chain fatty acids such as butyrate, increased absorption of calcium and magnesium, and improved elimination of toxic compounds. Preclinical studies indicate an increase in bone density after consumption of FOS. In addition, the beneficial effects of FOS on the presence of Bifidobacteria suggest an improved absorption of vitamins, such as the B complexes.
