Health Secrets of Coconut Nectar

Small batches ensure that our organic, low glycemic Nectar, made from this natural sap, is a raw, enzymatically alive product, minimally evaporated at low temperatures for 1 hour (only to remove excess moisture), never exceeding an average summer day in the tropics.  By contrast, most agave syrup is hydrolyzed at temperatures up to 140 degrees F. for approximately 36 hours (the end product containing 90% fructose, compared to coconut nectar which is only 16% sucrose).
